Herb Goat Cheese Stuffed Jalapeños - cooking recipe

Ingredients
    1/4 cup herb and garlic goat cheese
    1 slice bacon, cooked and crumbled
    2 tsp minced scallion
    6 (3 inch long) fresh jalapeno peppers, halved, seeds and ribs removed
    1 tbsp shredded sharp Cheddar cheese
Preparation
    Preheat grill. Using heavy duty foil, make a grilling tray for peppers. Coat with cooking spray.
    Combine goat cheese, bacon and scallion. Season. Distribute between pepper halves then arrange on foil. Sprinkle with Cheddar cheese. Place foil on grill, cover and grill for 3 mins, or until cheese is melted. Serve warm.
