Lamb And Date Pilaf - cooking recipe

Ingredients
    1 cup basmati rice
    2 tbsp olive oil
    1 1/3 lbs lamb loin
    2 1/2 cups mixed greens
    1/2 cup mint
    10 None fresh dates, pitted, chopped
    1.25 oz dried apricots, chopped
    1/4 cup lemon juice
    1 tsp cinnamon
    1 tsp cumin
Preparation
    Cook rice according to package directions.
    Meanwhile, heat half the oil in a large frying pan on high. Season lamb, then cook for 4-5 mins each side for medium, or until cooked to desired doneness. Transfer to a plate, cover loosely with foil and let rest for 5 mins.
    Slice lamb and place in a large bowl. Add rice, mixed greens, mint, dates and dried apricots. Whisk together remaining oil, lemon juice, cinnamon and cumin. Drizzle over salad and toss to combine. Season to taste and serve.
