Hazelnut And Herb Toasts - cooking recipe

Ingredients
    1/2 None loaf brioche bread, sliced, crusts removed
    1/3 cup extra virgin olive oil, plus extra for brushing and drizzling
    6 oz hazelnuts, roasted, skins removed
    1/2 oz mint leaves, plus extra to garnish
    1/2 oz parsley leaves
    1/2 tsp zaatar, plus extra to serve
    1 None lemon, juiced
Preparation
    Preheat oven to 375\u00b0F. Line a baking sheet with foil. Brush both sides of bread with oil. Cut into fingers and arrange on baking sheet. Bake 5-10 mins, turning once, until golden.
    Meanwhile, for the topping, place hazelnuts, herbs, oil, zaatar and lemon juice in a food processor or blender. Process into a chunky paste and season to taste. Spread on toasts, drizzle with olive oil and top with extra mint leaves to serve.
