Chicken Karaage - cooking recipe

Ingredients
    1 tsp sugar
    1 tsp salt
    1 1/4 inches fresh ginger, grated
    2 tbsp mirin
    1 tbsp sake
    1 tbsp Japanese soy sauce
    1 tsp sesame oil
    1 lb chicken thigh fillets, coarsely chopped
    1/4 cup all-purpose flour
    None None grapeseed oil, for deep-frying
Preparation
    Combine sugar, salt, ginger, mirin, sake, soy sauce and sesame oil in a medium bowl. Add chicken and toss to coat. Season. Cover and chill for 30 mins.
    Coat chicken in flour, shaking off excess. Heat grapeseed oil in a large, deep saucepan to 350\u00b0F. Deep-fry chicken, in batches, until golden brown. Drain on paper towels and season. Serve with lemon wedges.
