Crusted Lamb Racks - cooking recipe

Ingredients
    3 1/2 tbsp butter, melted
    1/2 tsp smoked paprika
    1 tbsp flaky sea salt
    1/2 tsp ground black pepper
    1 None lemon, zested
    2 tbsp coarsely grated ginger
    2 (16 oz) lamb racks, trimmed
    1/2 cup dried breadcrumbs
Preparation
    Preheat oven to 400\u00b0F.
    Combine butter, paprika, flaky sea salt, pepper and lemon zest. Squeeze in juice from grated ginger.
    Brush lamb with seasoned butter then coat in breadcrumbs. Arrange, meat-side up, in a shallow baking dish. Roast for 20 mins, until crust is golden brown and meat is cooked to your liking. Transfer to a cutting board and let rest for 7 mins. Slice into cutlets. Let cutlets rest for 2-3 mins then transfer to a warm serving plate.
    Serve immediately.
