Gluten Free Chocolate Cake - cooking recipe

Ingredients
    1 cup soy flour
    3/4 cup cornstarch
    1/4 tsp baking soda
    1/2 cup cocoa powder
    1 1/3 cups granulated sugar
    12 tbsp butter, melted
    1 tbsp white vinegar
    1 cup evaporated milk
    2 None large eggs
    4 oz mashed banana
    2 tbsp raspberry jam
    1 1/4 cups heavy cream, whipped
    None None powdered sugar, for dusting
Preparation
    Preheat oven to 350\u00b0F. Grease 2 - 8 inch cake pans and line bases with parchment paper.
    Sift soy flour, cornstarch, baking soda and cocoa powder into a mixer. Add sugar. Mix in butter, vinegar and evaporated milk. Add eggs, mashed banana and jam and beat on medium speed for 2 mins. Transfer to prepared pans and bake for 30 mins, or until a skewer inserted in the center comes out clean. Let cool in pans for 5 mins then transfer to a wire rack to cool completely.
    Sandwich cakes together with whipped cream and lightly dust with powdered sugar.
