Sweet Soy Pumpkin - cooking recipe

Ingredients
    1 lb pumpkin or butternut squash chunks
    1 1/2 cups dashi (or fish stock)
    2 tbsp mirin
    1 1/2 tbsp sugar
    1 tbsp Japanese soy sauce
Preparation
    Place pumpkin, dashi, mirin and sugar in medium saucepan. Bring to a boil. Reduce heat to low; simmer, covered, for 5 mins, turning after 2 mins.
    Add soy sauce; cook for 8 mins, or until pumpkin is tender, turning pieces halfway through. Remove from heat; let stand for 5 mins.
    Serve hot or at room temperature drizzled with cooking liquid.
