Flavored Salts - cooking recipe

Ingredients
    None None FOR THE LEMON SALT
    2 medium lemons
    1 cup sea salt flakes
    2 tsp dried oregano leaves
    2 tsp red pepper flakes
    None None FOR THE ORANGE SALT
    1 medium orange
    1 cup sea salt flakes
    2 tsp fennel seeds
    1/2 tsp ground white pepper
Preparation
    For the lemon salt, remove peel from lemons with a zester, or, peel lemons thinly with a vegetable peeler, avoiding the white pith. Cut peel into thin strips. Combine peel with salt and oregano in a medium skillet. Stir gently on low heat for 3 mins or until peel is dry. Remove from the heat. Stir in red pepper flakes. Cool.
    For the orange salt, remove peel from oranges with a zester, or, peel oranges thinly with a vegetable peeler, avoiding the white pith. Cut peel into thin strips. Combine peel with remaining ingredients in a medium skillet. Stir gently on low heat for 3 mins or until peel is dry. Remove from the heat. Cool.
    Store flavored salts in an airtight container in a cool dry place for up to 2 months. Sprinkle lemon salt over chicken or fish. Sprinkle orange salt over pork, fish or duck.
