Pepita And Sesame Triangles - cooking recipe

6 tbsp (3/4 stick) butter, at room temperature
2 tbsp sugar
1 None egg
1 None lemon, peel finely grated
3/4 cup flour
1/2 cup whole wheat flour
1/2 cup pepitas (pumpkin seeds), chopped
1/3 cup apricot jam
2 tbsp sesame seeds
Preparation

Preheat the oven to 400\u00b0F. Grease and line an 11 x 7-inch baking pan with parchment paper, extending paper above long sides for handles.
Beat butter, sugar, egg and lemon peel in large bowl with an electric mixer until light and fluffy. Sift flours; stir into dough with pepitas. Press into prepared pan. Spread top with jam and sprinkle evenly with sesame seeds.
Bake for 20-25 mins until golden. Cool completely in pan. Cut into squares. Cut squares in half to form triangles.
