Creamed Corn And Bacon Stuffed Potatoes - cooking recipe

8 None baking potatoes
1 tsp vegetable oil
1 slice bacon, coarsely chopped
4 oz canned creamed corn
2 tbsp finely chopped fresh cilantro leaves
Preparation

Preheat oven to 400\u00b0F. Grease and line a baking tray with parchment paper.
Boil, steam or microwave potatoes until just tender. Drain.
Meanwhile, heat oil in a large frying pan over medium heat. Cook bacon for 2 mins, or until crisp. Remove from heat and mix in corn and cilantro.
Cut 1/3 inch off tops of potatoes. Scoop flesh out from potato tops and transfer to a medium bowl. Discard peels. Scoop 2/3 of flesh from potato bottoms and transfer to bowl. Stir in bacon mixture. Place potato \"shells\" on prepared tray and fill with mashed potato mixture. Bake for 15 mins, or until heated through.
