Chicken And Pea Pilaf - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 None large brown onion, finely chopped
    2 cloves garlic, crushed
    1/2 tsp ground turmeric
    1 tsp ground coriander
    1 lb boneless, skinless chicken thighs, cut into 1/2-inch pieces
    1 2/3 lbs white long-grain rice
    1/2 cup chicken stock
    1 cup frozen peas, thawed
    2/3 cup cilantro, chopped
    1/2 cup golden raisins
    None None Lemon wedges, to serve
Preparation
    Heat oil in a large saucepan over moderate heat. Cook and stir onion, garlic, and spices for 4 mins. Add chicken; cook and stir for 5-6 mins or until chicken is golden brown.
    Stir in rice. Cook and stir for 3 mins. Stir in stock. Bring to a boil. Reduce heat. Cook, covered, for 15 mins or until rice is tender and liquid is absorbed. Remove from heat. Let rest, covered, for 5 mins (do not lift the lid).
    Stir in peas, cilantro and raisins. Season with salt and pepper. Spoon into bowls. Serve with lemon wedges.
