Watermelon Shrimp Salad - cooking recipe
Ingredients

1 1/2 lbs seedless watermelon, peeled and cut into 1/2-inch dice
1 lb cooked medium shrimp, tails on
3 1/2 oz feta, cubed
1/4 cup black olives
2/3 cup mint leaves, plus more for garnish
1 tbsp roughly chopped chives
1 tbsp lemon juice
1 tbsp extra virgin olive oil
Preparation

In a large bowl, combine the watermelon and the shrimp, reserving four shrimp for garnish. Add the feta, black olives, mint, chives, lemon juice and extra virgin olive oil. Season to taste and toss well, then divide among serving glasses. Garnish each glass with a shrimp and mint leaves.
