Crispy Salmon With Tartar Sauce - cooking recipe

2 None gherkins, finely chopped
2 None green onions, finely chopped
2 tbsp capers, finely chopped
1 tbsp finely chopped parsley
1 tbsp lemon juice
2/3 cup mayonnaise
1 lb salmon fillet
2 tbsp flour
None None Pinch cayenne pepper
1 None egg
2 tsp finely chopped thyme
3/4 cup dried breadcrumbs
None None Oil, for frying
None None Thyme sprigs and lemon wedges, to serve
Preparation

For the tartar sauce, mix the gherkins, onions, capers, parsley, lemon juice, mayonnaise and a little salt and pepper in a medium bowl. Transfer to a small serving dish.
Cut the salmon into 1/2-inch wide strips. Combine the flour, cayenne pepper and a pinch of salt in a shallow dish. Beat the egg in a second dish. Mix the thyme and breadcrumbs in a third dish. Dust the salmon pieces in the flour, then coat in the egg and finally the breadcrumbs.
Heat 1/2 inch of oil in a large skillet on medium-high heat. Fry the salmon for 1-2 mins on each side until crisp and golden. Drain on paper towels. Garnish with thyme sprigs. Serve with the tartar sauce and lemon wedges.
