Baked Apricot Chicken With Sautéed Cabbage And Garlic Bread - cooking recipe

Ingredients
    4 tbsp olive oil
    4 None chicken breast, skinned
    8 slices French bread
    2 None garlic cloves, peeled
    2 tbsp apricot jam
    1/2 cup white cheddar cheese, shredded
    1 tbsp butter
    1 None onion, peeled and chopped
    10 cups cabbage, trimmed and shredded
    1 sprig marjoram, to garnish
Preparation
    Heat 2 tbsp of the oil in a frying pan and saute the chicken over a medium heat for 10 -15 mins, turning occasionally, until browned and almost cooked through. Transfer to a shallow baking dish. Preheat the oven to 400\u00b0F. Rub the slices of bread with one halved garlic clove and brush with the rest of the oil. Place on a baking sheet.
    Crush the second garlic clove and mix with the apricot jam. Brush all over the chicken. Sprinkle with the grated cheese and bake for 8-10 mins or until the cheese is golden and bubbling. Bake the garlic bread at the same time, turning once until crisp and golden.
    Meanwhile, heat the butter in a deep frying pan and cook the onion for 5 mins. Add the cabbage and cook over a medium heat for 5-6 mins until just tender, stirring occasionally. Season with salt and freshly ground black pepper.
    Serve the chicken garnished with marjoram and with the cabbage and garlic bread.
