Apricot And Maple Muffins - cooking recipe

Ingredients
    1 cup milk
    5.25 oz bran cereal
    2/3 cup brown sugar
    7 oz diced apricots
    2 tbsp maple syrup
    1 cup self-rising flour + 2 tbsp
    None None butter, to serve
Preparation
    Combine milk, cereal, sugar, apricots and maple syrup. Cover with plastic wrap and chill overnight.
    Preheat oven to 350\u00b0F. Line 8 recesses of a 12-cup muffin tray with paper liners. Liberally spray cases with oil.
    Sift flour over chilled mixture and stir to combine. Distribute between paper liners and bake for 35 mins, or until a skewer inserted in the center comes out clean. Let cool in tray for 15 mins then transfer to a wire rack to cool completely. Discard paper liners. Halve muffins and serve with butter.
