Spicy Rice Noodles With Lamb And Bok Choy - cooking recipe

16 oz fresh rice noodles
1 tbsp peanut oil
1 lb ground lamb
3 cloves garlic, crushed
2 None fresh small red Thai chili peppers, chopped finely
1 lb bok choy, sliced thinly
2 tbsp tamari soy sauce
1 tbsp fish sauce
2 tbsp soy sauce
4 None spring onions, sliced thinly
2 oz lightly packed fresh Thai basil leaves
1/2 lb beansprouts
Preparation

Place noodles in a medium heatproof bowl and cover with boiling water. Separate gently and drain.
Heat the oil in a wok and stir-fry pork until browned. Add garlic and chili pepper and stir-fry until fragrant. Add noodles, bok choy and sauces and stir-fry until bok choy just wilts. Remove from heat and stir in spring onion, basil and beansprouts. Serve immediately.
