Smoky Eggplant Dip - cooking recipe
Ingredients

2 None large eggplant
2 cloves garlic, minced
1 None lemon, juiced
2 tbsp fresh cilantro or parsley, chopped
None None crudites such as radishes, cucumber, snow peas, baby carrots, cherry tomatoes, to serve
None None bread, to serve
Preparation

Grill eggplants over an open flame, or under broiler, until charred on all sides. Halve then let cool. Scoop out flesh then transfer to a food processor and puree until smooth. Add garlic, lemon juice and herbs. Puree. Season.
Serve with vegetable crudites and bread.
