Pineapple Wedges With Palm Sugar Syrup - cooking recipe

Ingredients
    1 None pineapple
    4 oz palm sugar or brown sugar
    None None Mint sprigs, to serve
Preparation
    To prepare the pineapple, slice 1/4 inch off the top and bottom. Stand upright and slice off the skin. Cut the fruit lengthwise into 8 equal wedges and remove the core.
    Place the palm sugar and 1 cup water in a small saucepan on high heat. Bring to a boil. Boil for 10 mins, until the syrup thickens.
    Serve the pineapple drizzled with the syrup. Sprinkle with mint.
