Kale With Ham And Smoked Sausage - cooking recipe

2 1/2 tbsp lard or butter
2 None onions, peeled and finely diced
3 1/3 lb kale, blanched and coarsely chopped
2 cups vegetable stock
1 lb smoked ham
2 None smoked sausages
1 1/2 lb small waxy potatoes
4 tbsp butter
2 tbsp sugar
1 pinch allspice
Preparation

Heat the lard (or butter) in a saucepan and saute the onions. Add the kale and stock and bring to a boil. Add the ham and simmer for about 40 mins. Add the sausages and continue to cook for 20 mins. Meanwhile, cook the potatoes in boiling salted water for 20 mins. Drain then rinse under cold water and peel. Heat the butter in a pan and saute the potatoes until golden brown all over. Season, sprinkle with sugar and caramelize. Remove the ham from the kale and slice it. Season the kale to taste, sprinkle with allspice and serve it with the ham, sausage and potatoes.
