Blueberry Yogurt Bread - cooking recipe

12 tbsp butter, softened
2 tsp finely grated lemon zest
1 1/4 cups firmly packed light brown sugar
2 None large eggs
1 1/3 cups all-purpose flour, sifted
1/2 cup self-rising flour, sifted
3/4 cup Greek yogurt
5 oz frozen blueberries
Preparation

Preheat oven to 325\u00b0F. Grease a 9x4 inch loaf pan and line base and sides with baking paper, extending paper 2 inches above long sides.
In a stand mixer, beat butter, lemon zest and sugar until light and fluffy. Beat in eggs, 1 at a time. Stir in flour and yogurt, in 2 batches. Fold in blueberries. Transfer to prepared pan and bake for 1 hour 30 mins. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
