Lamb And Cheese Gözleme - cooking recipe

Ingredients
    4 1/3 cups all-purpose flour
    1 tsp salt
    1 tbsp oil
    1 strip bacon, chopped
    1 None onion, finely chopped
    1 lb ground lamb
    7 oz feta, crumbled
    5 cup baby spinach, chopped
    2 oz cheddar, grated
    1 None tomato, chopped
    None None Lemon wedges, to serve
Preparation
    Sift flour and salt together into a large bowl. Add 1/2 cup warm water, mixing to form a firm dough.
    Knead dough on floured surface for about 5 mins, until smooth and elastic. Return to bowl and cover with a clean tea towel.
    For the filling: Heat oil in a large frying pan on high. Saute bacon and onion for 3-4 mins until tender. Add lamb and cook for 4-5 mins, breaking up lumps as it cooks. Transfer to a bowl and cool. Stir in feta, spinach, cheddar and tomato and season to taste.
    Divide dough into 8 portions. Roll each piece into a 8 x 12 inch rectangle. Spoon about 1 cup filling evenly over half of each rectangle. Fold over dough to enclose and fold over edges to seal.
    Heat a griddle or large frying pan on medium. Brush one gozleme with oil and cook for 3-4 mins each side until browned and crisp. Repeat with remaining gozleme. Cut into wedges and serve with lemon.
