4 None medium tomatoes, chopped coarsely
2 None medium carrots, chopped coarsely
1 None medium red pepper, chopped coarsely
3 tbsp fresh flat-leaf parsley leaves, firmly packed
Preparation

Working in batches, puree all ingredients in a food processor or blender. Strain through a coarse sieve into a large serving jug. Stir in 1 cup juice. Chill until ready to serve.
