Spinach, Garlic And Bacon Penne - cooking recipe

14 oz penne
2 tbsp oil
5 slices bacon, chopped
4 cloves garlic, sliced
2 None birdseye chilies, finely chopped
1 None lemon, rind grated and lemon juiced
4 oz baby spinach
None None Grated Parmesan cheese, to serve
Preparation

Cook penne in a large saucepan of boiling salted water according to package directions. Drain, reserving 1/2 cup of cooking liquid.
Heat 1 tbsp of the oil in a small skillet on medium heat. Add bacon and cook 3 mins, until golden. Add garlic and chilies and cook 1 min, until fragrant. Add lemon peel and juice and simmer 1 min.
Toss penne with reserved cooking liquid, bacon mixture, remaining 1 tbsp oil and spinach until spinach just wilts. Season to taste. Sprinkle with Parmesan cheese.
