Sirloin Steak A La Bordelaise - cooking recipe
Ingredients

1 kg sirloin steak
7 tbsp olive oil
350 g shallots, peeled and halved (2 set aside and finely diced)
2 cloves garlic, peeled and finely chopped
4 tbsp butter
100 g sugar
400 ml dry red wine
1-2 tbsp white wine vinegar
1 kg potatoes, peeled and cut into wedges
500 g green beans
1/2 bunch thyme
1/2 bunch parsley
None None coarse sea salt

Rub the steak with 2 tbsp of olive oil and season with pepper. Cover and chill for 1 hour. Preheat the oven to 225\u00b0F. Heat 2 tbsp of oil in a frying pan and sear the steak over a high heat on all sides. Season to taste, put it in a roasting pan and roast it in the oven for about 3 hours.
Melt 2 tbsp of butter in a saucepan and saute the shallots and garlic. Add the sugar and caramelize it. Pour in the red wine and simmer for 10 mins until it becomes syrupy. Remove from the heat, add the vinegar and season to taste.
Heat 3 tbsp of oil in a nonstick pan and cook the potatoes, turning them often for 20 mins. Cook the beans in a little boiling salted water for 15 mins. Take the steak from the oven and leave aside to rest, covered in foil. Drain the beans and leave to cool.
Melt 2 tbsp of butter and saute the remaining shallots and about half of the thyme. Add the beans, and swirl them briefly in the butter. Season to taste. Sprinkle the remaining thyme over the potatoes. Rub the steak with parsley and slice it. Sprinkle with coarse sea salt and serve with the shallots, beans and potatoes, garnished with thyme.
