Tomato, Sardine And Olive Bruschetta - cooking recipe

Ingredients
    8 oz can boneless sardines
    4 None medium tomatoes, finely diced
    1/2 None small red onion, finely chopped
    2 oz pitted kalamata olives, sliced
    2 tbsp chopped basil, plus extra leaves to serve
    8 slices crusty bread, such as ciabatta
    2 cloves garlic, peeled
    1/2 tbsp olive oil
Preparation
    For the topping, combine sardines with tomato, onion, olives and chopped basil.
    Toast bread on both sides until golden. Rub with garlic and brush with oil. Top with sardine mixture and sprinkle with pepper and extra basil leaves to serve.
