Ingredients

1/2 cup sliced almonds, chopped very finely
1 tsp vanilla bean paste
1 tsp finely grated orange peel
2/3 cup berry jam
2 sheets frozen puff pastry, thawed
2 tbsp granulated sugar
Preparation

Combine almonds, paste, orange peel and jam in a small bowl.
Spread jam mixture evenly over pastry sheets. Working with one sheet at a time, fold two opposite sides of pastry inwards to meet in the middle; flatten slightly. Repeat fold again and flatten slightly. Fold again so the outside edges of pastry meet.
Roll pastry in sugar, then wrap, separately, in plastic wrap. Freeze 30 mins or until slightly firm.
Preheat the oven to 350\u00b0F. Line baking pans with parchment paper.
Unwrap pastry. Cut pastry into 1/3 inch-thick slices. Place slices, cut-side up, 2 inches apart on prepared pans.
Bake palmiers for 20 mins or until puffed and golden. Cool in pans on wire rack. Store palmiers in an airtight container for up to 3 days.
