Mandarin Orange Jam - cooking recipe

Ingredients
    8 None large Mandarin oranges, peeled, 1/2 rind finely sliced, seeds discarded
    4 1/4 cups granulated sugar
    1 None lemon, juiced
    None None toast, to serve
    None None butter, to serve
Preparation
    In a food processor, process orange flesh until pulpy. Transfer to a heavy-bottomed saucepan along with sliced rind, sugar, 4 cups water and lemon juice. Stir over low heat until sugar dissolves. Bring to a boil then reduce heat and simmer, uncovered, stirring occasionally and skimming surface, for about 1 hour 30 mins.
    Serve with toast and butter.
