Cucumber Melon Salad With Mint - cooking recipe
Ingredients

1-2 tsp honey
1-2 None shallots, finely chopped
2 tbsp orange juice
1 None lemon, 1/2 juiced
2 tbsp oil
1 None cantaloupe, halved, seeded, cut into balls with a melon baller
6 sprigs fresh mint, leaves chopped, plus extra leaves to garnish
4 None small cucumbers, thinly sliced
Preparation

Whisk together honey, shallots, orange juice and 2 tbsp lemon juice. Slowly whisk in oil until emulsified. Season.
Combine cantaloupe, mint and cucumbers in a large bowl. Add vinaigrette and toss to combine. Garnish with extra mint.
