Pork And Quince Stew - cooking recipe

Ingredients
    2 None quinces, core removed and thinly sliced
    7 oz tagliatelle
    1 tbsp olive oil
    1 lb lean boneless pork, diced
    1 None onion, diced
    5 oz cherry tomatoes
    3 tbsp thyme leaves
    1 cup pork stock
    1 1/4 cups whipping cream
    None pinch grated nutmeg
Preparation
    Place the quince in a saucepan and cover with water. Cover the pan then gently simmer for 12-15 mins, stirring occasionally. Meanwhile, cook the pasta according to the package instructions then drain.
    Heat 1 tbsp oil in a frying pan then sear the pork in batches for 3-4 mins. Add all the meat back into the pan and season. Mix in the onion, tomatoes and thyme and cook for 3-5 mins. Pour in the stock, cream and cooked quince. Bring to the boil. Season and stir in the nutmeg then serve with tagliatelle.
