Hearty Goulash Soup - cooking recipe

Ingredients
    2 tbsp oil
    750 g stewing beef, diced
    2 None onions, peeled and sliced
    200 g button mushrooms, halved
    3 None mixed peppers, deseeded and diced
    250 g waxy potatoes, peeled and diced
    2 tbsp tomato puree
    2 tbsp plain flour
    2 tsp paprika
    1.25 litres vegetable stock
    125 ml red wine
    4 tbsp chopped fresh parsley, to garnish
Preparation
    Heat the oil in a large saucepan, add the meat in 2 batches and brown for 3-4 mins, turning. Add the onions, mushrooms, peppers, potatoes, and tomato paste and the browned meat to the pan and mix together.
    Sift in flour over the contents of the pan and saute for 1-2 mins. Mix in the paprika and season. Pour in the stock and wine and bring to a boil. Cover and simmer for 50 mins-1 hour. Sprinkle with parsley before serving.
