Peanut Beef Noodle Stir-Fry - cooking recipe

Ingredients
    7 oz dried rice stick noodles
    1 tbsp vegetable or peanut oil
    3 cloves garlic, crushed
    2 tsp grated fresh ginger
    1 1/4 lbs ground beef
    1/4 cup thick sweet soy sauce
    2 tbsp soy sauce
    1 tbsp sweet chili sauce
    1 bunch (12 oz) baby bok choy, coarsely chopped
    4 None green onions, thinly sliced on the diagonal
    1/2 cup finely chopped peanuts
Preparation
    Soak noodles in boiling water in a large bowl for 5 mins, stirring to separate strands. Drain. Rinse under cold water. Drain.
    Heat oil in a wok or large skillet on high heat. Add garlic and ginger. Stir-fry 1 min. Add ground beef, stir-fry, breaking up lumps, 5 mins or until browned.
    Mix sauces in a small bowl. Add 1/3 of the sauce mixture to the wok. Stir-fry 1 min. Add bok choy and green onions. Stir-fry 1 min or until tender. Add noodles with remaining sauce mixture. Stir-fry 2 mins or until heated through. Spoon into serving bowls. Serve sprinkled with peanuts.
