Grilled Chicken With Spicy Garlic And Herb Salt - cooking recipe

2 tbsp sea salt flakes
4-5 sprigs fresh sage, leaves picked, 1 tbsp finely chopped
2 tsp fresh rosemary, finely chopped
1 clove garlic, minced
1 None fresh long red chili, deseeded, thinly sliced
4 (1 1/4 lb) chickens, spatchcocked (butterflied), halved
2 tbsp extra virgin olive oil
None None watercress, to garnish, optional
Preparation

To make the herb salt, combine salt, chopped sage, rosemary, garlic and chili. Brush chicken with oil then sprinkle with herb salt. Grill, skin-side down, over medium heat for about 10 mins. Flip over and sprinkle with sage leaves. Close grill lid and cook for 10 mins, or until cooked through.
Serve grilled chicken with any remaining salt mixture. Garnish with watercress, if desired.
