Baked Chicken, Bacon And Mushroom Casserole - cooking recipe

4 None chicken breasts
8 None bacon rashers
3 tbsp sunflower oil, plus extra to grease
1 None onion, diced
500 g mushrooms, sliced
Pinch None smoked paprika
200 g whipping cream
400 ml weak vegetable stock
2 tbsp cornflour
Pinch None caster sugar
100 g Cheddar, grated
None None Chopped parsley, to garnish
Preparation

Preheat the oven to 400\u00b0F. Grease a baking dish with oil. Season the chicken and wrap 2 pieces of bacon around each breast. Heat 2 tbsp oil in a large frying pan, add the chicken and sear, turning for 4-5 mins. Remove from the pan and place into the baking dish.
Now heat 1 tbsp oil in the frying pan then add the mushrooms and onions. Saute for 2-3 mins, stir in the paprika and sugar then season. Pour in the cream and stock and bring to a boil. Mix the cornstarch with a little water, then pour into the pan and simmer, stirring until thickened.
Pour the mushroom sauce over the chicken. Sprinkle with cheese then bake for 20-25 mins. Sprinkle with parsley to serve.
