Salmon Terrine - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None shallot, peeled and finely diced
    1/4 lb zucchini, diced
    1 lb skinless salmon fillets, cut into small pieces
    2 None egg whites
    1 cup whipping cream
    2 oz fresh flat-leaf parsley, finely chopped
    2 oz sun-dried tomatoes in oil, drained and diced
    3 slices smoked salmon, diced
    2-3 tsp sweet smoked paprika
    None None green salad, to serve
Preparation
    Heat the oil in a frying pan and saute the shallot and zucchini for 2 mins, turning. Season with salt and black pepper, transfer to a plate and cool.
    Place the salmon and egg whites in a bowl and whip with a hand blender for 30 seconds. Gradually add the cream, still whipping. Chill for 1 hour.
    Preheat oven to 325\u00b0F. Grease a 4-cup loaf pan. Stir the shallot, zucchini, parsley, tomatoes and smoked salmon into the cream and salmon mixture. Stir in the paprika and season with salt and black pepper. Spoon into the pan and smooth the top. Bake for 50 mins, covering with foil after 25 mins. Cool for 4 hours, then turn out of pan serve cold with green salad.
