Rice And Spinach Gratin - cooking recipe

Ingredients
    3/4 cup brown rice
    4 oz baby spinach, plus additional, for garnish
    4 oz silken tofu, drained and coarsely chopped
    15 None black olives, 10 chopped, 5 left whole
    1 None red onion, finely chopped, plus additional, to serve
    1/3 cup pine nuts, toasted, plus additional, for garnish
    2 tbsp olive oil
    3 None eggs, lightly beaten
    1 cup grated Cheddar or Gruyere cheese
    None None Shaved Parmesan cheese, to serve
Preparation
    Cook rice in a saucepan of boiling water according to package directions. Drain.
    Preheat the oven to 400\u00b0F. Grease a 2-quart baking dish.
    Combine rice, spinach, tofu, chopped olives, onion, pine nuts and oil in a large bowl. Add eggs and 1/4 cup of the cheese and mix to combine. Season. Spoon into prepared dish. Sprinkle with remaining 3/4 cup cheese.
    Bake for 30 mins, until golden and set. Top with Parmesan cheese, whole olives and additional spinach, pine nuts and red onion.
