Molten Chocolate Soffle With Blackberry Sauce - cooking recipe

5 oz dark chocolate, chopped
1/2 cup butter
2 None eggs + 2 egg yolks
1/3 cup granulated sugar + 1 tbsp
2 tbsp all-purpose flour
1/2 lb blackberries
3 tbsp creme de cassis
1 tsp powdered sugar, to serve

Preheat oven to 325\u00b0F. Grease six 5 oz ramekins and sprinkle with sugar. In a saucepan, melt chocolate and butter over low heat. Whisk eggs, egg yolks and 1/3 cup sugar until creamy. Add flour and chocolate mixture. Distribute between ramekins. Bake for 10-12 mins, until risen and firm to the touch.
Meanwhile, heat 1 tbsp sugar over low heat until caramelized. Add blackberries and heat, stirring, until caramel is dissolved. Add liqueur then puree and strain. Drizzle sauce over serving plates, top with souffles and dust with powdered sugar.
