Easy Paella - cooking recipe
Ingredients

2 tbsp olive oil
2 None tomatoes, chopped
1 None red pepper, seeded, sliced
1 None red onion, peeled and chopped
1 clove garlic, peeled and crushed
1/2 cup long-grain rice
3 cups chicken stock
1 tbsp lemon juice
1/2 tsp turmeric
1 None bay leaf
10 oz cooked chicken, chopped
12 None shrimp, peeled (tails left intact), deveined
12 None mussels, scrubbed, beards removed
1/2 cup frozen peas
None None stuffed green olives, crusty bread, to serve
Preparation

Heat the oil in a large frying pan over a high heat. Saute the tomato, pepper, onion and garlic for 4-5 mins or until the onion is tender. Add the rice and cook, stirring, for 1 min until coated in oil.
Stir in the stock, lemon juice, turmeric and bay leaf, then season to taste. Bring to a boil, then reduce the heat and simmer, covered, for 20-25 mins or until the rice is tender and the liquid is almost absorbed.
Stir in the chicken, shrimp, mussels and peas. Cook until the mussels open (discard any unopened mussels, as these should not be eaten) and shrimp is cooked through.
Serve the hot paella accompanied with stuffed green olives and crusty bread, if desired.
