Sweet Lime Pie - cooking recipe
Ingredients

1 cup self-rising flour
1/2 cup brown sugar
2 oz desiccated coconut
1/2 cup butter, melted
2 None limes, zested and juiced + extra lime zest, to decorate
4 None egg yolks
13.5 oz can sweetened condensed milk
None None whipped cream, to serve
Preparation

Preheat oven to 350\u00b0F. Lightly grease a 9 1/2 inch tart pan with a removeable base. Combine flour, sugar, coconut and butter. Press firmly into base and sides of pan. Place on a baking tray and bake for 10-12 mins. Let cool.
Once cool, whisk lime zest and juice, egg yolks and sweetened condensed milk until smooth. Transfer to prepared shell and bake for 10-12 mins, until just set. Chill for 3 hours, or overnight. Sprinkle with extra zest and serve with whipped cream.
