Fragrant Salmon Salad - cooking recipe

Ingredients
    4 None shallots, finely sliced
    1/4 cup lime juice
    1/4 cup brown sugar
    2 tbsp fish sauce
    4 (5 oz) skin-on salmon fillets
    1 tbsp oil
    2 tsp cracked black pepper
    1/3 cup fresh mint leaves
    1 cup fresh cilantro leaves
    1/3 cup fresh Thai basil leaves
    3 None kaffir lime leaves, finely sliced
    2 None Persian cucumbers, sliced
    1 tbsp peanut oil
    None None sliced chili, shredded green onion and lime wedges, to serve
Preparation
    Combine shallots, lime juice, brown sugar and fish sauce. Set aside for 10 mins, until shallots are transparent.
    Heat a large frying pan over high heat. Coat salmon in oil then sprinkle with black pepper. Cook, skin-side down, for 3-4 mins, until crisp. Flip over and cook for 2-3 mins, until cooked to your liking. Let rest for 5 mins then flake into pieces with a fork.
    Meanwhile, combine herbs, kaffir lime leaves and cucumbers. Add peanut oil, shallot mixture and salmon and toss to combine. Top with chili and green onion. Serve with lime wedges.
