Rocky Road Brownie Bars - cooking recipe

Ingredients
    5 oz dark chocolate, chopped
    1/2 cup butter, chopped
    3/4 cup granulated sugar
    1 None large egg, lightly beaten
    1 cup all-purpose flour, sifted
    1/4 cup self-rising flour, sifted
    -1 None Rocky Road Mixture
    4 oz mixed marshmallows, chopped
    3 oz red candied cherries, halved
    2/3 cup mixed unsalted nuts, roughly chopped
    1/3 cup desiccated coconut
    18 oz milk chocolate, melted
Preparation
    Preheat oven to 350\u00b0F. Lightly grease and line a 7x11 inch rimmed baking tray, extending paper 3/4 inch above edge of pan.
    Combine chocolate and butter in small saucepan over low heat and stir until smooth. Let cool for 10 mins then stir in sugar and egg. Fold in flour then transfer to prepared pan. Bake for 15-20 mins, until firm to the touch. Let cool to room temperature.
    Meanwhile, mix together all ingredients for the rocky road. Spread over brownie base and chill for 1 hour, or until firm.
    Cut into squares with a hot knife to serve.
