Potato And Bean Frittata - cooking recipe
Ingredients

1 lb potatoes, peeled and chopped into small cubes
2 - 14 oz cans red kidney beans, drained and rinsed
2 None onions, peeled and chopped
2 tbsp olive oil
4 None eggs, beaten
1/2 cup milk
1 pinch chili powder
1/4 bunch parsley, chopped
Preparation

Heat the oil in a large non stick skillet and cook the potato cubes for about 10 mins, turning them regularly. Season to taste and add the onions and beans and cook briefly. Mix the eggs and milk together and stir in the chili powder. Pour the egg mixture over the potatoes and cook, covered, over a low heat until the eggs are set. Gently slide out of the skillet onto a serving platter. Serve sprinkled with parsley.
