Cheese Sticks - cooking recipe

Ingredients
    1.5 oz Parmesan cheese, grated
    2 oz Cheddar cheese, grated
    1/2 cup butter, at room temperature, chopped
    1 None egg
    1/4 cup all-purpose flour
    1/4 tsp cayenne pepper
    2 tbsp finely chopped fresh chives
Preparation
    Preheat oven to 350\u00b0F. Line 2 baking trays with parchment paper.
    Mix together cheese and butter. Add egg and mix until combined. Sift together flour and cayenne then add to butter mixture along with chives. Mix until dough just comes together then turn out onto a lightly floured work surface and knead until smooth. Wrap in plastic wrap and chill for 30 mins.
    Roll dough into 4 long, thin logs. Cut into 3 inch pieces and arrange on trays. Bake for 10-12 mins, until golden brown. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
    To serve, sprinkle with sea salt.
