Vegetable Soup With Bacon And Croutons - cooking recipe

Ingredients
    1 tbsp butter
    1 None onion, diced
    1 lb carrots, peeled and diced
    2/3 lb potatoes, peeled and diced
    3 1/8 cups vegetable stock
    2 tbsp sunflower oil
    2 None bread slices, cut into cubes
    4 None strips bacon
    1/4 cup creme fraiche or sour cream
    None None Chervil, to garnish
Preparation
    Melt the butter in a saucepan, add the onion, carrot and potato to the pan. Saute for 2-3 mins, stirring. Pour in the stock and simmer for 10-15 mins, stirring occasionally.
    Heat the oil in a frying pan, add the bread and saute for 2-3 mins, turning. Remove from the pan and drain on paper towels.
    Fry the bacon in the oil for 4-6 mins, until crisp.
    Stir in creme fraiche or sour cream and season the soup. Blend until smooth using an immersion blender. Divide the soup between 4 bowls and top each bowl with bacon, croutons and chervil. Serve.
