Orange Chicken With Mash - cooking recipe

2 lbs potatoes, peeled and cut into 3/4-inch pieces
1/4 cup milk
3 tbsp butter
1/3 cup freshly squeezed orange juice
1 clove garlic, crushed
1 1/3 lbs boneless skinless chicken thighs, trimmed
1 pkg (1 oz) chicken gravy mix
1/2 tsp finely grated orange peel
None None Baby spinach leaves, to serve
Preparation

Place potato in a large saucepan; cover with cold water. Bring to a boil. Boil for 12 mins or until tender. Drain; return to pan. Place on low heat. Add milk and butter; mash until almost smooth. Season.
Meanwhile, heat a grill pan on high heat or preheat the grill to medium-high. Combine 1/4 cup of the orange juice and the garlic in a glass or ceramic bowl. Add chicken; toss to coat. Spray chicken with no stick cooking spray. Grill chicken, turning frequently, for 10 mins or until cooked through.
Prepare gravy mix according to package directions. Stir in orange peel and remaining juice. Divide mashed potato among serving plates. Top with chicken. Serve with gravy and spinach.
