Crispy Chicken With Citrus Soy Dressing - cooking recipe

Ingredients
    1/2 cup all purpose flour
    6 None chicken thighs, fat trimmed
    2 tbsp vegetable or peanut oil
    None None FOR THE DRESSING
    2 tbsp mirin rice wine
    1 tbsp lemon juice
    1 tbsp lime juice
    1 tsp finely grated fresh ginger
    1 tsp sugar
    1/4 cup soy sauce
    None None cooked white long-grain rice, to serve
    2 tbsp finely chopped chives
Preparation
    Place flour on a plate and season with salt and pepper. Coat chicken in flour and shake off excess.
    Heat oil in a large pan over high heat. Cook chicken, in batches, for 2-3 mins each side or until golden brown and cooked. Transfer to a heatproof plate. Cover with foil and let rest for 5 mins. Slice thickly.
    To make citrus soy dressing, combine the rice wine, lemon juice, lime juice, ginger, sugar, and soy sauce in a small saucepan over moderate heat. Bring to a boil. Remove from heat. Cool slightly.
    Spoon rice on to plates. Top with chicken and drizzle with dressing. Sprinkle with chives. Serve at once.
