Potato Waffles With Apple Compote - cooking recipe

Ingredients
    2 1/4 lbs tart apples, peeled, cored and chopped
    3/4 cup apple juice
    2 None cinnamon sticks
    4 tbsp sugar
    2 1/4 lbs potatoes, peeled, grated and placed in a colander to drain, potato water reserved
    1 None onion, peeled and grated
    2 None eggs
    3 tbsp all-purpose flour
    1 tsp salt
    None None Maple syrup, to serve
Preparation
    Place the apples, apple juice, cinnamon sticks and sugar in a saucepan and bring to a boil, stirring. Simmer over a medium heat for 20 mins, stirring frequently. Remove from the heat and allow to cool. Remove the cinnamon sticks.
    Mix the potatoes and onion together. Add the potato water, eggs, flour and salt and mix well. Grease the waffle iron then preheat. Cook 4 waffles. Serve with the apple compote and maple syrup.
