Prosciutto Wrapped Steaks With Creamy Mushrooms - cooking recipe

4 slices prosciutto
4 None rib eye steaks
2 tsp olive oil
1 tbsp chives, diced
None None mashed potato, salad, to serve
None None Mushrooms
3 tbsp butter
2 tbsp olive oil
1 lb thickly sliced mixed mushrooms
2 cloves garlic, crushed
1/2 cup white wine
2 tsp Dijon mustard
1/2 cup heavy cream
Preparation

Preheat grill on high. Wrap prosciutto around steaks, and brush with oil. Grill 3-4 minutes each side, until cooked to desired temperature. Rest, covered.
To make mushrooms, heat butter and oil together in a large frying pan on high. Add mushrooms and cook, stirring, 3-4 minutes, until they begin to soften. Add garlic and cook 1 minute more. Blend in wine and mustard. Cook, stirring, until reduced by half. Pour in cream. Bring to a boil, stirring. Simmer 3-4 minutes, until thickened slightly. Season to taste.
To serve, spoon creamy mushrooms over steak. Sprinkle with chives. Accompany with mashed potato and salad.
