Cheesecake With Cherries - cooking recipe

Ingredients
    7 tbsp softened butter
    1 cup sugar
    1 1/2 tsp vanilla extract
    4 None eggs
    3/4 cup all purpose flour
    1 pinch baking powder
    1 3/4 lbs cream cheese
    1 (24 oz jar) cherries, drained (keep the juice)
    1 heaped tsp cornstarch
Preparation
    Preheat the oven to 325\u00b0F. Mix the butter, 1/4 cup of sugar and 1/2 tsp of vanilla extract with an eggbeater until creamy, then stir in 1 egg. Mix the flour and baking powder and stir them into the butter mixture. Pour the dough into a greased springform cake pan (10 inches in diameter), smooth it over and refrigerate it.
    Beat the 3 remaining eggs, 3/4 cup of sugar and 1 tsp of vanilla extract. Stir in the cream cheeses and pour the mixture onto the crust. Bake the cheesecake on the bottom shelf of the oven for about 45 mins. With a palette knife, carefully loosen the cake from the edges of the cake pan, and leave the cheesecake to cool in the oven with the door open.
    Bring the cherry juice to the boil in a saucepan. Mix the cornstarch into a smooth paste with a little water, remove the cherry juice from the heat and stir the cornstarch into it. Simmer the mixture for 1 min, stirring constantly, then stir in the cherries. Let the mixture cool and serve the cheesecake with the cherries on top.
