Ingredients

1 cup self-rising flour, plus 2 tbsp
1/4 cup brown sugar, plus 2 tbsp
1/2 tsp ground cinnamon
1/2 cup skim milk
1 None large egg yolk
1/2 cup canned pie apple filling, chopped coarsely
2 None large egg whites
2 None medium Granny Smith apples, peeled, cored, cut into wedges
3/4 cup vanilla ice cream
2 tbsp pure maple syrup
Preparation

Sift flour, 1/4 cup sugar and cinnamon into a large bowl. Whisk together milk, egg yolk and canned apple filling then add to dry ingredients and mix until combined.
Whip egg whites to soft peaks then fold gently into apple mixture.
Heat a medium nonstick frying pan over medium-high heat. Pour 1/4-cupfuls of batter into pan. Cook until browned on both sides. Repeat with remaining batter to make a total of 8 pancakes.
Cook apple wedges and remaining brown sugar over low heat, stirring, until apple caramelizes.
Divide pancakes between serving dishes. Top with apple mixture then ice cream. Drizzle with maple syrup to serve.
