Banana, Date And Pecan Nut Bread - cooking recipe

8 tbsp (1 stick) butter, at room temperature
3/4 cup packed brown sugar
3 None eggs
1 1/2 cups whole wheat self-rising flour
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup mashed bananas
1/2 cup flaked coconut
1/2 cup milk or buttermilk
1/3 cup chopped pecans
1/3 cup chopped dried pitted dates
Preparation

Preheat the oven to 350\u00b0F. Lightly grease an 8 x 4-inch loaf pan.
Beat the butter and sugar in a large bowl with an electric mixer until creamy. Add the eggs one at a time, mixing well after each addition.
Sift flour and spices. Fold into batter with banana, coconut, milk, pecans and dates. Spoon into prepared pan.
Bake for 50-60 mins or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
